Bordered by the Mekong. Landlocked, agricultural, Lao-influenced. The cooking that most of Thailand actually eats at home — sticky rice, grilled meats, salads pounded in a clay mortar, and heat that isn't apologising to anyone.
Our kitchen is built around the traditions of Ubon Ratchathani and the surrounding provinces. Every papaya salad is pounded to order in a krok — one at a time, in front of the customer — the way it should be. Meats are marinated overnight and grilled over hot coals until the fat sings. Sauces are built from fish sauce, palm sugar, garlic, lime, and fresh bird's-eye chili.
We don't dial the heat down. We don't sweeten the sauce. If a dish is meant to be tart, hot, and funky — that's how it leaves the kitchen. Ask us for medium and we'll ask you why.
